Description: I have tried using other melons and even Honeydew.

Ingredients:
  1. 1 1/2 cups seeded chopped green tomatoes
  2. 1 1/2 cups chopped seedless watermelon
  3. 2/3 cup chopped green onion
  4. 1/2 small jalapeno pepper minced
  5. 2 tbsp lime juice
  6. 3 tbsp olive oil
  7. 1/4 cup chopped cilantro
  8. 4 (6 oz) striped bass fillets with skin on
Preparation:
  1. Preheat grill to medium-high (350-400 degrees). Meanwhile for salsa, combine green tomatoes, watermelon, green onions, jalapeno, lime juice, 2 tbsp olive oil, cilantro, and salt and pepper to taste. Cover and refrigerate.
Instructions:
  1. Rinse and pat dry fish dry. Brush fillets with remaining tbsp of oil and season with salt. Place fish side down oin grill. Grill 6 minutes per side or until fish flakes easily ith a fork. Top with salsa.
