    Chicken Pot Pie

Description: This is a hearty, tasty dish that's super easy to make. Also very good leftovers!
    Serving Size: Serves 4-6 people
    Time: 1 hour, 30 minutes
    Difficulty: Easy

    Ingredients:
    1. 2 ready-made pie crusts
    2. 2 cups frozen mixed vegetables
    3. 3 boneless, skinless chicken breasts, boiled
    4. 1 teaspoon dried thyme
    5. 1 (10.75 ounce) can condensed cream of celery soup
    6. 1 (10.75 ounce) can condensed cream of potato soup
    7. 1 egg for egg wash
    Preparation:
    1. Boil your chicken breasts until done, then cool enough so you can handle them and cut in bit-size
    2. pieces. Prior to pouring the chicken and veggie mixture into the crust, bake the bottom crust for
    3. ten minutes to ensure it is not soggy when your pie is finished.
    Instructions:
    1. Preheat oven to 400 degrees F (200 degrees C).
    2. Line a 9 inch pie dish with one pastry, brush lightly with egg wash and bake for 10 minutes then
    3. set aside while you prepare the filling.
    4. Blanch frozen mixed vegetables for 3 to 4 minutes. Drain.
    5. Once chicken is diced, place in a large bowl. Add vegetables, thyme, celery soup and potato
    6. soup and stir together, making sure the veggies and chicken are moistened by the soups.
    7. Pour filling into pastry lined pie dish.
    8. Arrange top layer of pie crust, seal and flute the edges. Cut slits in the top of the crust to allow
    9. for steam to escape.
    10. Brush pastry lightly with egg wash.
    11. Place pie on cookie sheet. Put aluminum foil around the pie crust edges.
    12. Bake at 400 degrees F (200 degrees C) for 30 minutes.
    13. Remove foil and continue to bake for an additional 30 minutes until golden brown.
    14. Remove from oven and let stand for 5 minutes and then serve.

No wars had ever touched her, and she had lived through three; nothing had disturbed that world of hers, where gentlemen smoked on the porch or in hammocks, where ladies fanned themselves gently and drank cool water." - Jean Louise Finch describing her aunt in 'Go Set a Watchman'

    Architects do it with models.
