    Jerked Wings

    Description: I did these on the smoker. Used a couple of chunks of apple wood. Would be great on the grill too.
    They weren't set your mouth on fire hot, but had a gradual heat that built up after 4 or 5 wings.
    Serving Size: 10 wings
    Difficulty: Medium

    Ingredients:
    1. 2lbs Chicken Drumettes

    2. FOR JERK RUB
    3. 1 large Onion, chopped
    4. 4 Scallions, chopped
    5. 4 cloves Garlic, chopped
    6. 1 - 4 Habaneros
    7. 3 Bay leafs
    8. 1 teaspoon Allspice
    9. 1/4 teaspoon cinnamon
    10. 1/2 teaspoon Thyme
    11. 1/4 teaspoon Cloves
    12. 2 tablespoon(s) Olive oil
    13. 2 teaspoon(s) Salt
    14. 1/4 cup Rum, dark
    15. 3 tablespoon(s) Lime juice
    Preparation:
    1. PREPARATION:

    2. For Jerk Paste
    3. Heat olive oil and saute everything except salt, rum and lime juice.
    4. Turn heat up and add salt, rum and lime juice.
    5. Simmer until liquid is absorbed.
    6. Pulse in food processor
    7. Rub paste on meat and marinade in ziplock bag overnight.
    Instructions:
    1. Set up smoker for high heat (~375) or grill for indirect cooking
    2. Cook wings for 45-60 minutes until done.

    They were awesome. You should try them. Next time I'm going to cut back to 3 chilies. 4 was almost too much for my wife.
