Ingredients:

  2. 1 large red onion thinly sliced
  3. 1 teaspoon Cajun seasoning
  4. 1/2 teaspoon black pepper
  5. 1 teaspoon of butter
  6. 1 garlic clove
  7. 3/4 lb scallops
  8. 1-2 teaspoons hot sauce
Preparation:
  1. Heat oil in cast-iron skillet over high heat
  2. add onion, cajun seasoning and pepper, saute 3 minutes
  3. add butter and garlic, saute 30 seconds
  4. add scallops, cook 1 minute or until brown.
  5. sprinkle with hot sauce, turn, cook 3 minutes or until done.
