    Smile Tomato Sandwich

    Description: A Simple Southern Summer Delight!

    I think garden or farmer's market tomatoes are a must - seems the tomatoes I have been getting at Winn-Dixie, Publix and even sometimes at Whole Foods or Fresh Market have not lasted long, and / or had bad spots inside even when they look great on the outside.
    Serving Size: 1
    Time: 5 minutes or less
    Difficulty: Easy

    Ingredients:
    1. A GOOD Tomato, preferably garden fresh or from a local curb market
    2. A softer white bread - I like Publix White Mountain Bread, or Sourdough
    3. Fresh Basil
    4. 1 Tsp Lemon Juice
    5. Kosher Salt
    6. Fresh Pepper
    7. One Cup Good Mayo
    Preparation:
    1. Slice the tomato, then sprinkle liberally with salt and pepper
    2. Roll several basil leaves (5 or 6 decent sized ones) together, then slice to for Basil Ribbons
    3. Mix or whisk the lemon juice and and Mayo together
    Instructions:
    1. Spread Mayo on 2 slices of bread, refrigerate leftovers
    2. Layer tomato on one half, sprinkle basil ribbons on top
    3. Top with other bread slice
    4. Cut in half and enjoy

    For a twist, melt a couple of slices of smoked gouda cheese over the tomatos before placing on the bread, for a "Tomato Melt"

    How can someone from Theodore, AL...home of my close friend and flight school roommate, (and Great American) Rufus Lynwood Edwards (RIP,Lynn), hate tomatoes. You must have a gene that went whacky or something...

    My parents and brothers love 'em, so they would tend to agree with you. OTOH, my wife and son don't like them either. We don't ever have them in the house.

    I used to hate 'em. When I was a kid my mother and sister would eat a tomato just like you would an apple.

    For some reason when I hit my mid-30's my taste changed. I love them now.

    I still couldn't eat one like an apple, though.
