    Homemade Steak Sauce

    Description: Sauce good on red meat, lamb, pork
    Serving Size: 4-6
    Time: 25 or 30 minutes
    Difficulty: Easy

    1. 1/2 Cup Table Red Wine
    2. 1/2 Cup Good Balsamic Vinegar
    3. 1/2 Cup Beef Stock
    4. 2 TBS Butter
    5. 1 TBS Fresh Thyme
    6. 1 TBS Fresh Cracked Pepper
    1. Chop Thyme
    2. Crack Pepper
    1. Melt half the butter, add the balsamic vinegar and wine, let it reduce for 5-8 minutes
    2. Thin it now with the beef stock, reduce heat and let it reduce by half
    3. Add the thyme and pepper, cook for 2 minutes
    4. Add the last TBS butter to smooth it out

    You can modify this recipe to suit your tastes - if you want it it thicker and sweeter add more balsamic, more wind flavor use more wine. You can also add shallot, which works well.

    I like this over Med Rare lamb chops as well, and you can do just a straight basamic reduction (reduce by half) and omit the wine and beef stock.
