Ingredients:
Pork Tenderloin
Broccoli florets
Prosciutto
Sargento 4 State Cheddar Blend
Salt
Pepper
Garlic Powder
Hardins Seasoning
Slap yo Mama or other cajun seasoning
Fresh Parsley
Wood chips or chunks for smoking
Directions:
Prepare grill for direct and indirect cooking, soak some chips in water - I prefer apple and some maple for this dish
Boil water, adding salt, pepper, garlic powder, and some cajun seasoning
When water boils, steam broccoli till just done, then submerge into an ice bath to cool and protect bright green color
Butterfly the pork, then place wax paper over it and pound flat with meat mallet or cast iron skillet
Season well with salt, pepper, garlic powder, and then I do a light dusting of Hardins
Chop parsley
Chop broccoli into small pieces
Lay prosciutto slices on pork, layer cheese, then broccoli and more cheese, sprinkle with parsley
Roll into roast, folding like a burrito, then tie with kitchen twine
To the grill - place wood on coals, then place pork on hot side and brown, turning as needed
When browned, move pork off heat, close lid and cook till a thermometer inserted into thickest portion reads 150 to 155
Remove from heat. let rest for 15-20 minutes, slice and serve
Notes - You could combine the broccoli with bread crumbs to form a stuffing of sorts, or just use your favorite stuffing for a pork version of Thanksgiving Dinner
You want to just get a light smoke on the meat, so be careful and go easy with the wood
