Ok, these are actually shrimp burgers, and they are worthy of #17. Make 'em soon, like this weekend - quick and easy as well
Ingredients...
2 lbs medium shrimp, peeled and deveined
1 tsp chopped garlic
3 eggs, beaten
2 cups panko
1 TBS fresh pepper
2 tsps Old Bay
1 tsp slap yo mama cajun seasoning (or more if you like)
2 TBS fresh chopped parsley
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped green pepper
Lightly sautee the trinity - onion, bell pepper and celery, to soften, season with salt and pepper and put to side to cool
Divide the shrimp, chop half coarsely, then pulse the other half in a food processor 5 or 6 pulses to make a paste or puree of sorts
Mix all ingredients in a large bowl, adding the chopped shrimp and cooled trinity last - place ingredients in fridge for about 20 or 30 minutes to set, or 10 to 15 in the freezer
If mix looks a little too thick add a little olive oil for moisture
Pull mix and shape into patties, about 8 for a regular burger and chill another 15 or 20 minutes in the fridge on parchment paper
In a large frying pan heat canola oil to cover bottom of pan on a medium to med high heat
Fry burgers in batches, do not crowd pan, about 4 or 5 minutes a side should do it, just monitor closely as shrimp cooks so quickly
Build the burgers as you like - I suggest a sturdy bun, maybe a brioche. with lettuce, tomato, onion
Coat bun with whatever you like - cocktail sauce, remoulade, plain mayo, etc
I suggest this - Bama Mayo 1/2 cup
1 TBS or so Old Bay or Slap yo Mama
tsp fresh lemon juice
Mix all and slather on bun, enjoy!!!
