    Sauce and Rub Thread

    Ok, I love sauces and rubs. Love making them and experimenting, or just trying different things from the store.

    Recently I bought a new rub some may want to try, found it in Winn Dixie. It is Perfect Bite BBQ's Perfect Bite Butt Polish, made here in Alabama in Trussville. They have a variety of sauces and rubs, and have garned pretty good ratings. I think it is worth a try by folks, plus you are supporting a local, small business.

    I was raised in Mobile, Al. My Father played golf with Ozzie Boutwell who was the original owner of Ozzie's Barbeque. He gave Father his barbeque sauce recipe 60 years ago and it was later lost in a fire. I have been trying to find someone who has it. There was a posting on here but it ended with a retired post 4 years ago. PLEASE if anyone has this recipe please share with me. Thank you in aadvance! Julie W email: jk32352@comcast.net

    Ossie’s BBQ Sauce

    4 bell peppers
    6 onions
    1 gallon ketchup
    1 small can thyme
    2 small cans celery seed
    6 ounces Worchester sauce
    6 ounces hot sauce
    2 stalks celery - diced
    2 or 3 gloves garlic
    2 ½ gallons water
    1 pint vinegar
    1 lb. margarine

    Cook celery, onions, peppers for 15 minutes. Bring to a full boil – add remaining ingredients.

    Basic Rub

    Combine...

    1/4 cup smoked paprika
    1/4 cup brown sugar
    3 TBS Kosher Salt
    2 TBS Onion Powder
    2 TBS Garlic Powder
    2 TBS Dry Mustard
    2 TBS Chili Powder
    2 TBS Black Pepper
    2 tsp ground red pepper

    Chicken Rub

    In a mixing bowl, start with the basic rub above (Post #6)

    Add

    2 TBS Celery Seed, Fennel Seed, Ground Ginger

    Rib Rub

    In a Mixing Bowl, start with basic rub

    Add 1/4 cup dried parsley
    2 TBS dried oregano
    2 TBS lemon zest

    I usually use Flavorama #5 Barbeque Seasoning (made in Horn Lake, MS) and add turbinado sugar. I may add more sugar than some would prefer; probably about a 2:1 ratio of seasoning to sugar and the seasoning already has some sugar.
