Maybe not exactly what you are looking for, but Levi Wallace certainly bloomed over the course of his time at Alabama.
He certainly did, but he was a walk-on so kinda different circumstances.

We also had players like Eryk Anders, Rashaad Johnson, and Hootie who didn't start until their later years....
I knew there would be some examples, but it's not really the norm it seems and recruiting plays a part. I'd guess that a lower rated player would probably be more patient than a 4 or 5 star. Dallas, to his credit, was patient as a 4 star, but I don't blame him if he's feeling another place gives him more PT or exposure to get drafted.

When is the last time we've had a player "bloom" and become a star after patiently biding their time in the program for 3 or 4 years after redshirting???
2017 - Womack, Christian Miller, Anfrenee Jennings, and Anthony Averett all took redshirts and we big parts of the success this year. Holcombe was also a redshirt who was an early contributor in the season

three of those guys are back in 18, and add Deionte Thompson and Quinnen Williams as guys who'll be either starters or significant contributors.

in 17 we'd also would have liked to redshirt both Cowan and Allen and would have if not for the injuries so we'd continue the trend.

The staff typically talks with each player about this before they come in. Some certainly come in ready as you mentioned, but many come in knowing they're likely to redshirt, especially the DL, OL and OLB guys so they can get stronger/bigger. For some, they might be changing positions and need time to get used to that (also a lot of OLB guys since we recruit a lot of guys who play DE in HS to play OLB for us).

That said, point taken that a lot of guys, especially top rated guys, are coming in with an expectation to play early, and if they don't, they think about bolting.

Some guys leave for playing time. Other guys leave because the reality of starting just isn't in the books and a lot of them cannot accept being passed by younger players. It happens.
There will always be someone who is bigger, faster, smarter, more athletic, and more football savvy. (That's reality)

BUT

Quite a few guys really screw up when they decide the grass will be greener elsewhere.

NEW ORLEANS — The survivors of Alabama’s football program returned to campus this past winter, surveyed the scene and wondered where all their friends had gone. From a 26-person signing class of 2013, unsurprisingly ranked as the nation’s best, just three remained: cornerback Anthony Averett, center Bradley Bozeman and wide receiver Robert Foster. They shared a laugh.

Of that signing class, 10 would transfer. Nine would head off to the NFL, with five selected within the first two rounds of the draft. Two simply exhausted their eligibility in four seasons. Another two saw their college careers cut short due to medical issues.

And then there were three.

“Five years is just a humbling experience,” Foster said. “It’s a maturing experience. It’s a developing experience. Everyone has different ways of looking at it. We stuck around to make the best opportunity for ourselves.”

If he wants to play like Cristobal coaches, then by all means, go to Oregon. Cristobal is a solid recruiter but goodness... as a coach...
Hold on one minute! - he did make the magnanimous decision to allow the star RB who declared early for the NFL draft to make the team flight and join his "old" teammates on the sideline for the Las Vegas Bowl! And even congratulate them as they come off the field after a close defeat!

Want to say I've been told Mario and Lane didn't always see eye-to-eye. Part of me wonders if that was an issue with the OL while Mario was at Alabama.
