Have any of yall done smoked cheese? If not, when the weather cools off, give it a try. I am so glad I smoked a few pounds of pepper jack before the weather warmed up. I hope it will last the summer. I had some in my scrambled eggs this morning, which is why it's on the brain.
Get a screen tube specifically for cold smoking and wood pellets for fuel. Do a cold smoke for about 3 hours. Do not let the temperature get above 90 degrees. I put a pan below mine to catch it, just in case it melts. Put the cheese in a zip lock and let it mature for a week before eating. Supposedly, it evens out the flavor.
