Minn. State Fair Corn Dogs

1 cup yellow cornmeal
1 teaspoon salt
2 tablespoons honey
1 cup boiling water
1 egg, beaten
1/2 cup milk
2 tablespoons butter, melted
1/2 cup all-purpose flour
2 teaspoons double-acting baking powder
1 package hot dogs, any variety
Peanut oil, for deep frying
Bamboo skewers, soaked in water

Heat oil to 350 degrees.
In a bowl, stir cornmeal, salt, honey and boiling water.
In a separate bowl, beat together egg, milk and butter.
Add egg mixture to cornmeal mixture.
Sift together flour and baking powder, then incorporate it into the mix until smooth.
Insert stick into hot dogs, dip in batter, and place in a preheated fryer until golden brown - approximately eight to 10 minutes.
Drain, and serve.

Super Corndogs

1 cup corn meal
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 tablespoon oil
1/2 cup buttermilk (add till you get the right consistency)
1/2 cup fine chopped onion
2 fine chopped jalapeno pepers
1 small can cream corn
1/2 cup corn starch (for precoat)
1 package Hebrew National hot dogs (others will do)
1 slightly beaten egg
8 popsicle sticks, large bamboo skewers, metal skewers or other handles

DIRECTIONS:
Mix ingredients like you were making cornbread. Let the batter sit a few minutes for it to rise while you bring a pot of hot oil up to temp. 325-350F. Make sure dogs are moist then roll in cornstarch. Dip dogs in batter and place in hot oil. Deep fry till golden brown. Remove and drain on paper towels.

Dip in mustard, hot mustard, hot ketchup, regular ketchup, mayonnaise, wassabi or horseradish mayonnaise.

Serve with cotton candy and snow cones. ;)

Yeilds about 20 dogs.....

Rock Shrimp Corn Dog

# 5 pounds boneless pork butt, roughly chopped
# 5 pounds chicken breasts, center cartilage removed, roughly chopped
# 8 pounds rock shrimp
# 8 stalks lemongrass, minced
# 5 bunches scallions, thinly sliced
# 8 red jalapeños, chopped
# 2 bunches cilantro, chopped
# 3 Tablespoons garlic, minced
# ½ cup fish sauce
# 1 cup brown sugar
# 10 limes, juiced
# ¼ cup kosher salt
# 36 eggs
# 2 ¼ cups mayonnaise
# Bread crumbs from fresh hot dog buns, as needed



For the Rock Shrimp Corn Dogs:
Grind the pork, chicken and shrimp in a meat grinder or with the grinding attachment of a stand mixer. Combine the ground meat with lemongrass, scallion, jalapeño, cilantro, garlic, fish sauce, brown sugar and lime, then season with salt.

Add the eggs, mayonnaise and bread crumbs to meat mixture, then divide into 1¾ ounce portions and wrap each portion around a chopstick. Coat each “corn dog” with additional bread crumbs. Deep fry until golden brown

13/4 ounce servings would provide closer to 200 servings than 20. You better love corn dogs or have lots of open freezer space. LOL

just made those corndogs-- had a tough time getting the batter to stick-- any tips for next time? the cornstarch stuck but the batter wouldnt stick to the corn starch
Hummmm, the purpose of the cornstarch is to make the batter stick to the dog. You sure you were holding your mouth right?

Zach's Chow Mix

4 cups Rice Chex
4 cups bugles corn snacks
4 cups goldfish crackers
4 cups goldfish pretzels
2 cups cashews
2 cups pecans
2 cups peanuts
1 cup wassabi peas
2 sticks melted butter with 2 tsp Worcestershire, 1 tsp garlic salt

Mix all the dry stuff in a big bowl then pour in the butter mix and stir more to coat evenly. Pour onto cookie sheets and put in 250F oven for 30-40 minutes stirring every 10 minutes.

Caution - wassabi peas are pretty spicy.

Rest of the meal:

Lasagna - 6 layer meat sauce & 5 cheeses
Garlic toast
Salad mix
Blue Moon Beer

Apple Caramel nut pie

We decided it was safer to watch on TV. We also turned down some good grub from some LSU fans and just do family today.

Not doing the pumpkin Ale just the blue label stuff.
