1. dredge skate wings in flour
2. dip in egg wash
3. back in the flour again and set aside
4. heat oil to 365F
5. fry wings 2-3 minutes on each side depending on size & remove from pan.
6. add butter, shallots, capers and garlic. saute over medium heat about 5 minutes then add wine to deglaze.
7. let sauce thicken by stirring over heat another 7-8 minutes.
8. plate wings 2 to a plate and spoon sauce over fillets.
9. garnish with lemon wedges
