1. take one long pull on the beer
2. heat oil in sauce pan. Saute onion, garlic, ginger and pepper. Cook till tender.
3. Reduce heat and add rest of ingredients. Cook and stir about 5 minutes while finishing beer.
4. After sauce cools put in blender or food processor, add another splash of rum and buzz till smooth.

I made this sauce and used it on shrimp.. It was excellent
I used this tonight on a fresh killed chicken it was very good. The chicken was cut into quarters, grilled and the sauce put on during the last 30-40 minutes. It made a good coating and the flavor penetrated into the meat.
