1 - season ducks inside and out with salt and pepper
2 - stuff each duck with sliced onion and apples. you do not have to core or peel the apples.
3 - flour each duck and put in roasting pan breast side up. If you have fewer than 4 ducks use smaller pan.
4 - place bacon on each duck making an X on the breast
5 - add wine and orange juice using ratio of 1 cup wine to 1/2 cup orange juice. You only want about an inch or so of liquid in the pot.
6 - cook in preheated 425 oven uncovered for 20 minutes. Reduce heat to 325, add chopped green onions and mushrooms. Check liquid and add if needed.
