Put the ground beef, potatoes, and onions in a crock pot.
Add butter, salt and pepper.
Pour enough broth to cover.
Cover and cook on HIGH for 4 Hours or on LOW for 8 hours or until potatoes are tender.
Mash mixture until potatoes are coarsely chopped and soup is slighty thickened; stir in cream, a cup of cheese (however much you desire) and chives(optional).
Optional: Top with sour cream, bacon, cheese, Ritz and Texas Pete.
