Fried and Blackened Gator Tail

I like good fried gator. If done right it is very tasty, not at all like chicken but unique. If cooked badly it tastes like a pork chop cooked in old fish grease. I like it with a squeeze of lemon, tarter sauce or a bit of Tabasco ketchup.
The best meat on a gator comes from the jaw muscle. If you can get it you won't believe the difference in texture.

I was actually partial to the blackened once I cooked it..has a very nice gamey taste

There is a restaurant close to my Son's home that serves Blackened Gator Bites as an appetizer that are really good. I am a big fan. They also make fried crab balls that are insanely good. If I could I would keep one in my shirt pocket all day in case I got hungry.
