Pancakes, French Toast and grilled cheese sandwiches. We really like ours because it's so easy to clean, most of the time just a few swipes with a paper towel and its done.
Same here, the griddle is great for breakfast and love it for frying eggs, grilled cheese or any kind of grilled sandwich, have used it to cook hamburger patties. Like ddsmit said it cleans up easy.

Season HB as usual, also great to grill some onions for the burger or maybe some sliced mushrooms.
Other grilled sandwiches are piles of deli meat, cheese on bun. Wrap a brick with tin foil to use as a press or a skillet with a brick in it.
Bamaluver's right about the cheese steak on the griddle.
Hash browns are another thing the griddle is good for. Potato pancakes too.
Just go to any diner if you wanna get some ideas for griddle cooking. I only use mine if i need to make 30 or 40 pancakes real quick.
Nah... But my kids have a lot of friends.30-40 pancakes? You must have one hungry family!
