Begin by heating the oil in a pot or skillet till it begins to smoke. Remove from heat and when the oil is around 250F add the garlic and let steep for about 30 min.
Strain the oil into the jar or bottle and discard the garlic. Let sit for a couple of weeks before use then use within one month. Keep refrigerated.
You can make hot chili oil by doing the same with dried red chilies. I like to put a couple of the red chiles in the jar for looks. Great for frying eggs or coating the cornbread skillet for a little kick. Store the same way as the garlic oil.

I never thought of making hot pepper oil. Im gonna have to try that out.
Matt you can usually find the dried red peppers at the grocery store in the fresh produce section or nearby in bags. If you can't find the whole dried pepper use crushed pepper flakes.
