Butter Beans....

Anyone have an easy butter beans recipe? Not a soup.. (I did a search and see a good one...)...
I soak dry limas (baby or large) in water overnight. Drain them then put them in a pot with enough chicken stock to cover the beans by 2 inches. You can mix in some water if you like. Add some smoked bacon, ham hock, ham bone, tasso (spicy cajun ham) or other smoky meat (smoked turkey legs, wings and necks come to mind) to add flavor. Chop up an onion and throw that in too. Bring all this to a boil then season with salt & pepper, lower heat to low and cover. Stir and check liquid level occasionally add liquid when it gets just above the beans. Let cook till the beans are tender then turn off the heat.

The beans will make a gravy if you mash a few up or let them sit till they get cold then heat them again. Sometimes I add link sausage, leftover ham or porkchops to the pot for a one pot meal with steamed rice and cornbread.

Dry beans are healthy and should be in everyone's regular diet.

I like to make sure I have enough "juice" to go over cornbread.

Layer as follows:
Bowl
Cornbread
Rice
Butter Beans
More Butter Bean juice on top

Some slices of raw onion to eat with each bite!

You can also use fried potatos instead of rice!

Good eatin! Add some fried pork chops and youre in heave

Butterbeans and Cornbread ! Yummy !!

Although I had a sister who liked ketchup with hers. Yuck !
I had an electrician who worked for me for years who put ketchup on everything. He would come in the shop (when he wasn't reporting directly to a job) with 2 Egg McMuffins and a McMilk (he didnt drink coffee) and he would douse each McMuffin with ketchup. He put ketchup on red beans and rice, cornbread, in chili, on macaroni & cheese and I'm not joking.

I think we show our age by enjoying butter beans and corn bread.

ALthough I havent had any since I moved away from home some 25 years ago.
I cook a pot of dry beans 2-3 times a month. It might be pinto beans, big lima beans, small lima beans, black beans, navy beans or great northern beans but some kind of dry bean gets cooked. I usually put some kind of meat in the pot and we have beans and whatever over rice with cornbread and the rest gets used as a side dish till it's gone.

Bean soup made with dry navy or great northern beans is a staple at my house and I cook it about once a month with ham hocks, carrots, celery and onion. Sometimes we have cornbread and sometimes we have crackers.

Are you guys talking about LIMA beans or BUTTER beans?
I always thought the white beans were lima beans and they come dry in a plastic bag. My Grandmother always was able to find some that were HUGE! My Daddy called them "broad axes". You could only get one bean at a time in a spoon!
Lima beans, onion, cornbread and my mouth wrapped around a spoon! Can't beat it on a cold day.

Butter Bean: The Fordhook is larger, lighter in color, and has a stronger taste than the baby lima, but it is not a grown-up baby — it is a separate variety. In the south of the United States, Fordhook lima beans are commonly called butter beans.

Lord knows, I've sat with my mom and shelled my share of butter beans over the years. They tend to be expensive to buy fresh & shelled.

I have a confession to make. I feel so ashamed and yankeefied admitting this, but i eat ketchup on fried green tomaters! And i cuss ketchup every chance i get! My wife eats it on everything and i cant stand it. But something compels me to douce my little crunchy green discs of pure joy with ketchup.

where I come from,lima beans,large or baby are dried beans.Butter beans are picked fresh and either frozen or canned.Fordhook beans are green limas that are picked fresh and frozen or canned.All are served with cornbread cooked in an iron skillet and rice with an fresh sliced or diced onion.I also use a little hot sauce on my beans.
