Cajun Baked Oysters

Easy, yummy - what more could you want in an appetizer?

3 dozen oysters, drained
2 and a 1/2 TBS Butter
2 minced green onions
2 TBS Flour
3 oz can of mushrooms drained, OR equal amount of fresh, chopped
Dash Nutmeg
1/2 tsp salt
1/2 tsp cajun seasoning (slap ya mama)
1 TBS Worcestershire sauce
1/2 tsp fresh chopped parsley, plus extra for garnish
1 egg yolk
Bread Crumbs

Make a roux by with the flour and butter, sautee onions in roux. Add mushrooms, oysters and all seasonings
Cook 8-10 minutes over medium heat,
Remove from heat and add egg yolk
Spoon mixture into 6 ramekins, cover with bread crumbs
Bake at 350 for 15 minutes, garnish with parsley and serve
