Note: I've made this stuff twice, and ended up eating most of it myself. Entirely too rich to be imagined, but (like a good rich flan) is definitely worth the effort.

Bizcocho de Tres Leches

Traditional Puerto Rican quantity: Enough for 6-10 hungry people time: 1 hour

Sponge cake drenched in sweet cream. Very rich.

This is a dessert that has become popular in Puerto Rico since the 1980s. It is a very rich sponge cake drenched in cream, evaporated milk and condensed milk. Out of this world!

Ingredients

4 eggs, separated

1 cup sugar

1 cup self-rising flour, sifted

1 stick butter, melted and cooled

1/4 cup evaporated milk

1 tsp vanilla extract

Directions

Preheat oven to 350°.

Beat egg whites until stiff peaks form. Gradually add sugar , beating well.

Beat egg yolks until pale. Fold into egg whites .

Fold cake flour into egg mixture .

Mix evaporated milk , melted butter , and vanilla . Fold into batter .

Pour into greased and floured 7x11- or 8x8-inch baking pan (preferably glass).

Bake at 350° for 20 minutes. Remove from heat and let cool.

When the cake has cooled, use a fork to ..... holes all over top of cake. Pour milk mixture (below) over it.

1 can condensed milk

1 can evaporated milk

1.5 cups heavy cream

Directions

In a large bowl, pour the condensed milk . Slowly add the evaporated milk , stirring well to combine. Add cream , stirring well.

Pour over cooled cake. You may have to stop, wait a while for things to soak in, then continue pouring.

Slab the local bakery here makes a passable sponge cake. Can I skip the baking steps and go straight to the soaking and eating phase? How long does it take for the cake to drink the milk?

I have had Tres Leches donuts with simple glaze on them and they were insane.

I have had Tres Leches donuts with simple glaze on them and they were insane.
You could skip the baking phase, but it doesn't really take that long to make this. What you are really making is homemade angel food cake (sponge cake).

If you use a big enough casserole dish, it doesn't take but 15-30 mins. to get it all absorbed.

Like I said before, I ate most of the last batch. This stuff is REALLY rich!
