You guys have to be close to my age -- or just inherited a bunch of good recipes!:) ...Then again, maybe it's just the computer age:wink:.

Divinity - yes, that's the Karo recipe I have circa 1956! (Makes 1-1/2 #s).

Mamie's Million $$ Fudge - yes, site listed previously has same recipe....just make sure you cook (after bringing to a boil) exactly six minutes! (Makes 5#s, so you'll have plenty to share....or wear!:)

I love Karo and think it should be elevated to the beverage class. ;)
Bayou, here's my Christmas gift for you.....

Vanilla Fudge Yield: 1-1/2 pounds

2 T unsalted butter
3 cups sugar
1/4 cup Karo syrup - white or dark (red/blue labels)
1/2 tsp. sea salt
1 cup light cream-1/2 & 1/2-but I have used heavy duty whipping cream:smile:
1/2 cup milk
2 tsp. vanilla
1 cup coarsely chopped nuts

Place all ingredients except vanilla and nuts in saucepan. Cook over
medium heat, stirring constantly, to soft ball stage (238F) or until a small amt. forms a soft ball when tested in very cold water. (We always used the 'cold water test' - works every time!)
Remove from heat. Add vanilla. Cool to lukewarm (110F) (like a baby bottle milk test-on the wrist)
Then beat until fudge begins to thicken and loses its gloss. Fold in nuts.
Quickly spread into buttered 8-in sq. pan. When cold, cut into squares.
This is an unusual creamy fudge.....and heavenly!

I've never made Vanilla Fudge. Tonight could be the night! But would you explain:

1 cup light cream-1/2 & 1/2-
Would that be a cup of half & half?
And also 1/2 cup of milk?

When you've used heavy duty whipping cream (instead of the half & half) do you also use the 1/2 cup of milk?

Yes and yes. "Light cream" always means 1/2 & 1/2 to me! But if I don't have on hand (and haven't planned in advance) I have used whipping cream.....I never use anything but Fat Free/Skim (organic-tastes just like whole milk to me!) milk so to my irrational food mind either way works out the same!:)

Would you send some to Bayou?!:wink: I also find it most helpful if I have Nat King Cole singing The Christmas Song or Frank & Bing ... especially the album (now CD) they cut in 1945.....then I swing into Christmas with Pavarotti or Jane Monheit and end with A Classical Christmas and my Alabama FB CD! (Alabama great game highlights is for all seasons!) :biggrin:

BTW-Divinity....I also have a recipe from 1960's era with a bit of a 'twist' I meant to mention earlier....(made same way as previously listed) except:
2 cups sugar, 1/2 cup white Karo, and 1/2 cup water....when you add vanilla, also add 1 tsp. sifted powdered sugar. This adds texture to candy.

Daughter and I plan to make grandma's butter creams and some chocolate covered pretzils. After that it's on to cookies, sugar cookies, oatmeal cookies with different things mixed in like craisins, raisins, walnuts, pecans & macadamia nuts and chocolate chip cookies with and without nuts.
