Grate cheese, add softened butter and cream well. (I do all of this with the food processor.)
Add flour, pepper, and salt. Work until smooth. (If you mix this stage with the processor, be careful to not overmix; that makes the straws flatten. You can also do the mixing with your hands!)
Press through small attachment (star) of cookie press.
Bake at 375 for 15 - 20 minutes or until golden--not brown.
