Pimento Cheese...

I use

2 cups sharp cheddar
2 cups jack cheese
4oz jar pimento
1 cup real mayonnaise

when I want warmer pimento spread I add 6 pickled jalapeno pepper slices chopped. You could substitute the jalapeno peppers and juices with some of the juice or pepper sauce.

my wife likes me to add chopped green olives and I admit it has become our favorite, just chop a few pimento stuffed olives and fold them into the mixture.

Man, that sounds pretty good BT.
I like Price's Jalapeno spread found at the grocery store.

You can buy good pimiento cheese at the grocery cheaper than you can make it but to make great pimiento cheese nothing beats homemade. I know what cheese I am using and have the luxury of adding a few things if I want. The food processor makes making hits dish so easy. I have wanted to add bacon bits to a batch but so far haven't and I bet it would be good.
