RECIPE: Banana Sour Cream Cake

INGREDIENTS:

1 box 2 layer yellow cake mix
3 eggs
1 cup mashed bananas (about 3 ripe ones)
1 cup sour cream
1/4 cup oil
1 package 8oz cream cheese at room temp
1/2 cup (1 stick) butter) softened
1 box 16oz size powder sugar (4 cups)
1 cup chopped walnuts

DIRECTIONS:

Preheat oven to 350F. Grease and flour 13X9 inch baking pan. Mix together the cake mix, eggs, bananas, sour cream and oil in a large bowl using electric mixer on low speed till just moistened. scrape down sides while mixing. Mix 2 minutes on medium speed. Pour into pan and bake 35 minutes in oven or till tests done.

Cool cake on wire rack. While cake cools beat cream cheese and butter in bowl on medium speed till well blended then start adding powder sugar. Keep sides of bowl scraped down.

Cut cake in half. Level the bottom layer and add frosting to make filling. Top with other half of cake and frost top and sides. Press chopped walnuts onto sides of cake and you have a masterpiece.

Cake tip Placing cake layers in freezer for about 20 minutes before frosting sets the crumbs so they don't pull away as you frost the cake.

This cake is absolutely INCREDIBLE. The best dessert or food my wife has ever made. She made it last night at 10pm and it kept me up all night due to the 1 lb of sugar. :) Course it didn't help that I ate half the cake.

Question: Can this cake be made with two regular cake pans? Or do you need to use the 13x9 and cut it in half?

Finally made this one and it's fantastic, as stated above! I took it to work (local hospital) and it was consumed in about an hour. Rave reviews.

Wife made this again with some banana's that were going old. This recipe is the bomb. It is simply awesome with a cold glass of milk.

Matter of fact, I just ate a piece and had a glass of milk. :)
