Recipe: Oyster Rockefeller Pie

Personally, I don't do oysters. Love all other seafood, but not oysters. However, this was a recipe provided by a local caterer ... supposed to be delicious.

Oyster Rockefeller Pie

4 tbls. Butter
2 tbls. Lemon Juice
½ cup Green Onion
½ cup Purple Onion
1 tbls. Garlic
1 tsp.Cayenne
1 ½ cup Cream Cheese
½ cup White Wine
1 pint Oysters
1 cup Mushrooms
1 tbls. Worcestershire
1 tsp. Tabasco
1 ct. Pie Shell
1 cup Bread Crumbs
1 lb. Spinach
Salt & Pepper to Taste

Melt butter in a large skillet. Add chopped vegetables and sauté until tender. Add spinach, liquid seasoning and cream cheese. Cook at medium heat for 10 minutes. Add oysters. Cook for 10 minutes. Pour into pie shell and top with breadcrumbs. Bake at 350 degrees for 20 minutes or until browned.

I love Oyster Rockefeller. Never had it as a pie. ;) I also really like Oyster Bienville. I don't think I ever met an oyster I didn't like. :D

Two of my absolute favorites, also. If you try the pie, let me know how it is. Sounds interesting, but it's hard for me to imagine the end result.

The only fresh oysters I have seen here in the Chicago area are farm raised from the Pacific Northwest and boy are they proud of them. I'm figuring the pie would run around $25.

I have made another oyster pie that calls for fewer ingredients but is really good. It's easy to make and you spoon it out like a cobbler.

INGREDIENTS:
4 cups oyster crackers
4 cups oysters, drained, but with their liquor strained and reserved
Salt and freshly ground black pepper
few dashes of Tobasco
1/2 cup heavy cream
8 tablespoons unsalted butter

DIRECTIONS:
10-inch Pyrex deep-dish pie pan

Preheat the oven to 400 degrees F.

Coarsely crumble the oyster crackers and layer the bottom of the pie pan with 1 cup of them. Top with a layer of oysters, using 1 cup of them. Sprinkle with salt and pepper. Repeat with 3 more layers each of oyster crackers and oysters, remembering to season each oyster layer with salt and pepper.

Pour the oyster liquor into a glass measuring cup and add as much cream as necessary to make 1 cup. Pour over the oysters. Dot the top with the butter. Let the pie set for 10 minutes.

Place the pie in the top third of the preheated oven and bake for about 15 minutes or until the top begins to brown and the oysters are plump and hot. Turn up the heat and broil the oyster pie for 4 minutes or until the top is completely browned. Be careful not to overcook the oysters or they will expel all of the juices. If this happens, you will still have all of the oyster flavor, but not finely textured oysters. Serve immediately.
