Easy for those "on the run" nights!
Pork Chop and Potato Bake
4-6 pork chops
1 can cream of mushroom soup (do not add water)
1/2 cup sour cream
3 medium sliced potatoes
Sliced onions
Season chops with salt and pepper and brown. Mix the soup and sour cream together. Slice potatoes into round slices, and layer (in casserole dish): potatoes, onions -- potatoes, onions. Top with dollops of the soup/sour cream mixture. Top with chops and place remaining soup mixture over chops. Cover and bake in 350 degree oven for 1 hour. Uncover and bake additional 30 minutes or until potatoes are soft.
