Cornish hens are small, sort of like quail, but they are domesticated. You can buy them at most grocery stores, usually frozen.
Simply defrost, rub with cooking oil, apply lemon pepper, garlic powder, salt and pepper. Follow instuctions of your smoker, i.e. about 6 lbs of charcoal, water in the pan and soaked hickery. Cook about 5 hours, and don't peek (no need to). The wings will pull off with little effort win done.
I've cooked up to 10 hens at a time, with rave reviews. Each guest gets a hen. Extra points awarded for presentation.
