I'm going simple, I'm going to Spatchcock (Butterfly) a Chicken.
I'll BBQ it on my homemade UDS. (Anyone interested in making a UDS look up The BBQBrethern they have simple directions on their forum.)
The Old Time Butchers always referred to it as Butterfly.
The Chicken cooks evenly and in muchless time.
Makes great BBQ Chicken w/o getting part of the bird overdone while getting the Breast done.
