What's on the smoker/grill for Memorial Day Weekend?

This is what will be on my smoker this weekend along with homemade baked beans, homemade mustard-based potato salad, homemade vinegar-based slaw, homemade pasta salad, and homemade banana pudding! ROLL TIDE!!!!

I'm going simple, I'm going to Spatchcock (Butterfly) a Chicken.
I'll BBQ it on my homemade UDS. (Anyone interested in making a UDS look up The BBQBrethern they have simple directions on their forum.)
The Old Time Butchers always referred to it as Butterfly.
The Chicken cooks evenly and in muchless time.
Makes great BBQ Chicken w/o getting part of the bird overdone while getting the Breast done.

It's probably been more than a year since I posted. I've been a member 10-15 years. I'm cooking on my 2nd UDS. I sold my first one to a fireman buddy who lives down the street.

I've had a Stumps Baby gravity-feed smoker for 15 years and she's still going strong!

I did two bone in pork butts on Friday and a full brisket on Monday. It was a good weekend!
