We were supposed to go camping last weekend, but we got rained out Friday, and my son came down with a virus.
So, I cooked my blueberry cobbler in the Dutch oven Saturday night on my back patio.
Folks...there isn't anything in the world like Dutch oven cobbler, a cup of black coffee, and a cold night.
It was easy to make and pretty economical.
My ingredients:
1. One mix of Duncan-Hines or any off-brand of yellow cake mix (you can use white if you like). They usualy run around $.89 a box.
2. Two (2) cans of blueberries (it would have tasted even better if I had my sister's blueberrys from her yard).
3. A stick of butter.
I line my Dutch oven with foil, then I cut half a bar of butter and slice it into little pats. I set the pats of butter evenly around the bottom.
Then, I pour in one can of the blueberries and smooth it out until it covers the bottom fairly evenly.
I next add my dry cake mix, sprinkling it evenly across the blueberry.
I next add my second can of blueberry, and pour it across the mix (do not stir. simply pour it.)
Finally, I take the other half of the butter, and likewise, cut it into little pats and place it evenly across the top.
For my Dutch oven, I heat up around 32 brickettes. I put 18 on top and 12 on the bottom, so the bottom won't burn. That's aroud 37 to 400 degress when hot. I cooked it for about 5o-55 minutes, depending on the outside temp. Usually, it's around 45 minutes, but it was near freezing Saturday night outside.
You can apply the same principle in your regular stove oven. Around 375 degress for 45 minutes should do the trick.
Try it sometime. It's good.
