Ingredients...

1/4 cup chopped shallots
1/3 cup sliced mushrooms
1 tsp dry mustard
skosh of cayenne or slap yo mama
1 stick butter
3/4 cup flour
2 cups milk
1/2 cup dry sherry
2 egg yolks
2 dozen raw oysters

Melt butter in saucepan over medium heat
Saute shallot., mushrooms, mustard and cayenne
Add flour and cook 4 minutes
add WARM milk gradually and cook 8-10 minutes, then add sherry
remove from heat
Stir in beaten eggs

PLace oysters in half shell on baking sheet, cover with sauce, and bake 10-12 minutes at 350 degrees
