I'm sure a lot of people have a recipe for this cake. This one was especially good, it's been around for a lot of years. From my Mom:
Red Velvet Cake
[Note: You’ll need four cake pans for baking.]
Cake Body:
2 Cups Cooking Oil
1 ½ Cups Sugar
2 Eggs
2 Teaspoons cocoa
2 oz. Red Food Coloring
1 Teaspoon Vinegar
2 ½ Cups Flour
1 Teaspoon Salt
1 Teaspoon Baking Soda
1 Cup Buttermilk
1 Teaspoon Vanilla
Preheat oven to 350 degrees.
In a medium to large size mixing bowl, cream oil and sugar together; add eggs and beat well.
In a separate bowl, mix cocoa and food coloring together, blend well; add vinegar and mix well.
Add cocoa, coloring and vinegar mixture to oil, sugar and egg mixture; beat very hard.
In a third bowl, mix flour, salt and soda; add alternately with buttermilk. Add vanilla and mix until just well blended.
Bake for 30 minutes until done. Cook until cake first springs back. Do not overcook. Ingredient amounts will make a four layer cake.
Cake Frosting:
1 Stick Butter
8 oz. Package Cream Cheese
1 ½ Boxes of Confectioners Sugar
1 Teaspoon Vanilla
1 Cup Pecans, Chopped
Note: It may be necessary to add a few drops of sweet milk to make it fluffy.
Cream butter and cream cheese together, until light and fluffy; add about ½ of sugar and beat very hard. (If you like soft, fluffy icing; add a little milk and beat very hard.) Add remaining sugar and vanilla; mix well. Fold in nuts. Ingredient amounts will ice four cake layers.
