Simple Salsa

An simple recipe that at first glance would not compete with grocery store salsa.
Try it, I think you will be pleased with the results.

4 large tomatoes coarsely chopped
1 tablespoon finely chopped flat leaf parsley
½ red onion finely chopped
2 green chiles, seeded and finely chopped
Juice of ½ lemon
½ teaspoon salt
1 teaspoon freshly ground pepper

It’s really this simple. Mix together all the ingredient and stand for in the refrigerator for 15 minutes. When ready to serve, remove from the refrigerator, give it a stir and enjoy!
 
For a spiced up version.

1 can Mexican stewed tomatoes
1 can Italian stewed tomatoes
1 can tomato sauce
1 can (drained) chopped green chilies
20 drops Louisiana Hot Sauce
1 teaspoon Cajun seasoning
1/2 teaspoon chili powder
1 large onion

By hand or in food processor, chop onion, tomatoes and place in bowl.
Add chopped green chilies.
Add Louisiana Hot Sauce, chili powder and Cajun seasoning to taste.
Store in jars in refrigerator.
