You can spend a lot of time and money at the Opryland Hotel, but it's not near anything else to see. It's an experience within itself, but that's only about a night's worth.
If you want to go downtown, but sure to check out the Ryman, Tootsie's and Country Music Hall of Fame. If you're into country music, you'll enjoy the numerous bars that play live music.
The Predators are in town: preds so if you've never been to an NHL game, this would be a good chance. It's a lot of fun!
What kinds of things do you WANT to do? Sight seeing? Partying? What?
We are just looking for a nice quiet relaxing weekend away from the kids. Looking for a nice resturaunt and a reasonably priced hotel ($150 and under).
For a quiet weekend a trip to Centennial Park to see the Parthenon is good. You can walk the park for free. I don't remember what it costs to go in the Parthenon, but it shouldn't be too much. You might also want to check out the Hermitage if you are a history buff. Andrew Jackson's old digs are interesting.

There is a place called the Rain Forest Cafe that is suppose to be good. My (adult) kids liked it.
