Bamabound: Wow -- the possibilities are endless! Do you prefer chocolate .. pie, cake, or what? Here's a few easy ones...

Layered Chocolate Delight

List of Ingredients

1/2 C. butter, melted (1 stick)
1 C. flour
1 C. chopped pecans, divided
1 8-oz. cream cheese, softened
1 C. powdered sugar
1 12-16 oz. container Cool Whip ... divided
2 3-oz pkgs. instant chocolate pudding (or 1 lrg. pkg.)
3 C. milk

Heat oven to 350°.

Combine melted butter, flour, & 3/4 cup of the chopped pecans in a bowl. Mix well; press into the bottom of a 9"x13" glass baking dish. Bake for 15 - 20 minutes, until golden. Remove from oven and set aside to cool.

Combine cream cheese, powdered sugar & 1 cup of the Cool Whip in a medium bowl. Spread over nut crust.

Combine instant pudding with milk & spread over cream cheese layer.

Top with remaining Cool Whip. Sprinkle with remaining 1/4 cup of chopped pecans (or grated chocolate) & refrigerate until ready to serve.

Not Yo' Mama's Banana Pudding

2 bags Pepperidge Farm Chessmen cookies OR 1 box Nila Wafers
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant French vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.

In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies.

Refrigerate until ready to serve.
 

CHOCOLATE SHEET CAKE

2 Cups Flour
2 Cups Sugar
1 teaspoon Baking Soda
2 Sticks Butter or Margarine
1/2 Cup Crisco Oil
4 Tablespoons Cocoa
1 Cup Water
1/2 Cup Buttermilk
2 Slightly Beaten Eggs
1 teaspoon Vanilla
Chocolate Sheet Cake Icing

• In a large bowl sift together the sugar and the flour.

• In a saucepan melt the butter, cocoa, and water and bring to a boil. Pour over the flour mixture and stir until well mixed.

• Add the buttermilk, eggs, soda, and vanilla and mix well. Pour into greased flat pan, approximately sixteen by twenty inches, and bake in a 400-degree oven for twenty minutes.


CHOCOLATE SHEET CAKE ICING

1 Stick Margarine or Butter (1/4 Pound)
4 Tablespoons Cocoa
6 Tablespoons Milk
1 teaspoon Vanilla
1 Cup Pecans, Chopped
1 (1-Pound) Box Powdered Sugar, Sifted

• Combine margarine, cocoa, and milk in saucepan. Bring to boil, stirring constantly. Remove from heat and add powdered sugar, vanilla, and nuts. Mix well and spread over hot sheet cake.


Easy to make. Serves a big group and is absolutely delicious if you love chocolate.
