RECIPE: Nacho Cheese Dip

This is a modified version of the Velveta recipe:

1 can Mushroom soup
1 can Nacho Cheese or Cheese Soup
1 can Chicken soup
1 can diced Rotel tomatoes
1 lb Velveta Cheese (get Mexican if you like spicy)

Chop Velveta cheese into 1/2" cubes. Put Velveta Cheese in large microwavable bowl and cover. Microwave on high for about 2-4 minutes...until cheese is about 2/3 melted.

Mix other ingredients in blender until mixed well. Pour into bowl with velveta cheese and stir until well mixed. Microwave for 3-5 minutes on high.

Server warm with chips & chopped jalapenos.

Cream of Much does do a really good job in Cheese Dip aka Rotel in my family, my mom swears by it but our recipe is:

1 Block Velveta
1 Can Cream of Muchroom Souo
2 Cans Rotel

Combine all in a crock pot turn it on high and cook for about an hour, for a party or if you want a quick fix about 10-15 minutes in a big bowl in the microwave on high.

Also to fill your facy you can puree the Rotel in the blender(I do that I eat it all I don't like it chunky, and younger kids eat more of it that way).

Layer the following:

1 (16 ounce) can refried beans mixed with 1 envelope taco mix
1 large container sour cream mixed with 1 envelope dry onion soup mix
1 (4 ounce) can green chiles, drained
Chopped black olives
Diced scallions or any mild onion
Diced tomatoes
Mexican VelVeeta cheese, grated
1 can Italian Stewed Tomatoes, drained and chopped.

You may cover and refrigerate at this point. Heat thoroughly in a 350 degree oven until bubbly.

I went and bought the ingredients for this and made it this evening. It was out of this world! Thanks BamaNation, for a great recipe!!!

I concur with adding the sausage.

Here's another variation, I'm not good with recipes so you may have to experiment:

Lay out the chips on a baking sheet.
On top of each chip place hamburger cooked with or without taco seasoning, or spicy pork sausage (cooked), cheddar cheese, and your preferred peppers.
Bake in the oven until the cheese melts.
Remove from the oven and add sour cream, lettuce, green onions, and salsa or hot sauce.

It's very good, they are sot of like miniature taco salads. If you like a lot of cheese it will melt all over the pan and you have to use a spatula but it helps hold the ingredients together. Be sure to add the lettuce after baking, cooked lettuce is not good.
