Carrot Cake

Here's one my sister makes -- everyone loves it!

Carrot Cake

2 cups sugar
4 eggs
1 cup Wesson Oil
2 cups all-purpose flour
1 tsp. salt
2 tsp. soda
2- 1/2 cups grated carrots
1 tsp. vanilla

Cream together sugar, eggs and oil. Add dry ingredients, carrots and vanilla. Pour into greased and floured cake pans (3). Bake in 325 deg. oven for 30-45 minutes.

Frosting:

1 8-oz. package cream cheese (softened)
1 lb. confectioner's sugar
1 stick butter (softened)
1 cup chopped nuts

Mix all ingredients well. Will frost three layers.


Now, how about a good (hopefully easy) recipe for Lemon Pound Cake? I like the ones that have a glaze on the top!

Bamaluver, I add rasins, nuts and pineapple to your cake recipe...I still call it carrot cake though!!!

Lemon Supreme Pound Cake

My wife makes a lemon supreme pound cake that is fantastic. She uses a Duncan Hines lemon supreme cake mix but instead of using the water that it calls for, she substitutes 1 cup of apricot nectar in it's place. For the glaze she sifts 1 cup of powered sugar and stirs in the juice of one lemon. She then takes a toothpick and pokes holes in the top of the cake and drizzles the glaze over while it is still warm. YUMMMMMMMMMM :) Make sure you don't over cook it!!

BL's carrot cake

My mother's recipe is a lot like your's. She didn't put vanilla in her cake, she put in 2 teaspoons of cinnamon instead. Her frosting was the same as your's plus she added a teaspoon of vanilla. Best carrot cake I've ever tasted.

Not too much of a cake-fiend here...which is good because if I were, I'd have waaaaaaay longer to go to reach my So. Beach goal...:D

But mrs. exiled & her mother both make a plain ol' pound cake that is absolutely awesome. That would be my favorite.

On the commercial side, Snickers cheesecake @ either McAlister's or Sweet Peppers is great too.
