When its cool outside, mine would probably be a good hot bowl of either veggie or potato soup with a pan of cornbread or homemade bread.

Here's a few recipes for other comfort foods:

Macaroni and Cheese

1 pound macaroni, cooked and drained
2 tablespoons butter
2 tablespoons flour
2 cups milk
½ teaspoon salt
10 ounce package cheddar cheese, grated

Bring milk, salt and butter to a light boil, stirring constantly. Lower the heat and add flour into mixture, stirring with a wire whisk until smooth.

Add 1 cup of the cheese and continue stirring until smooth. Combine pasta and sauce and top with remaining cheese. Bake in a 350 degree oven for 15-20 minutes.


Red Beans and Rice

2 pounds dried red kidney beans
4 quarts water
6 pounds sausage (we usually use both Conecuh and smoked sausage, about half of each), cut into big pieces
6 cloves garlic, crushed
3 cups chopped yellow onion
3 cups chopped celery
1¼ cups chopped green pepper
1½ cups chopped green onions
2 bay leaves
2 teaspoons Worcestershire
1 tablespoon Tabasco
1 tablespoon minced fresh parsley
3 teaspoons salt

Rinse beans well and drain, picking out any unsuitable beans. Place beans in a large pot and cover with water. Bring to a boil. Reduce heat and simmer 40 minutes. Add sausage and cook covered over low heat for an hour, stirring occasionally. Add garlic, yellow onion, celery, green pepper, green onions and bay leaves. Continue cooking for an hour and a half, until beans are soft. Add Worcestershire and Tabasco sauces, parsley and salt. Simmer and serve over hot rice.

Mama Mary's Banana Pudding

3 eggs cup sugar
2 tablespoons self-rising flour
¼ cup hot water
2 cups milk
1 tablespoon vanilla
½ stick butter
2-3 ripe bananas
Vanilla wafers

Using a hand mixer, mix eggs, sugar and flour with hot water. Then add milk, still beating with hand mixer. Heat in a double boiler, stirring constantly until thickened. When thickened, beat in butter and vanilla with hand mixer. Cover the bottom of baking dish or trifle bowl with a layer of vanilla wafers. Add a layer of thinly sliced bananas, then a thin layer of pudding, spreading to cover. Repeat vanilla wafers, bananas and pudding topping, ending with a layer of vanilla wafers.

Corn Chowder

1 Tbs. Margarine
3 cups diced onions
3/4 cup crumbs(from unsalted oyster crackers)
2 cups water
2 cups chicken, beef or ham broth
3 cups diced potatoes
2 cups half and half (1 pint)
2 cups frozen corn kernals, defrosted
1 red and 1 green bell pepper, chopped and sauteed briefly in butter, add salt and freshly ground white pepper to taste.

Mix liquids and butter,add potatoes and onions,cook until done.Mix cracker crumbs and seasonings.Add to potato and onion mixure.Add red and green red peppers, mix well, bring to a boil, add cream and corn, simmer for 15-20 minutes.
