It's On A Slab

Put all ingredients in food processor, grind.
Adjust with reserve liquid to make hummus more creamy
Adjust salt to taste as you continue to grind
 
Ingredients
  • 1 15-ounce can chickpeas (or 1½ cups cooked dried chickpeas)
  • ¼ cup tahini
  • 3 tbsp extra virgin olive oil, plus more for garnish
  • 3 tbsp aquafaba (liquid from the canned chickpeas) or ice-cold water
  • ¼ cup fresh lemon juice
  • 2 cloves garlic, minced
  • ½ tsp sea salt, or to taste
  • A pinch of Aleppo pepper, paprika, or sumac, for garnish (optional)

Put it all in a food processor and blend to your favorite consistency.

Garnish with smoked paprika. My wife is Armenian and they use sumac on kebabs. I have never dusted my hummus with this.
