Good Morning Bayou ...

And good morning TideFans ... Gameday and the sun is rising on the North Cackalacky coast. I am starting the day watching two lazy dogs sprawled out on the bed, daring any foolish soul to wake my much better half on Saturday morning. ESPN, (the TV channel) is rehashing some nonsense about Boise Skate completely destroying some team from Ohio last night, the Cleveland Browns probably ... I am loading the boat to go after some flounder and redfish this morning and pull the crab pots for a little get together tonight. That's right, it is low country boil, a bushel of oysters, beer, about 12 dozen big blue crabs, boiled shrimp (fresh and big), corn on the cob, beer, crab dip, carrots and all that healthy schtuff, Alabama crowder peas, Jalapeno cornbread, grilled redfish and did I mention beer? It all starts around ... 6:00 pm (EDT) so we should be in full bloom when the boys tee it up at 6:30 CDT. One question haunts me however ... should I wrap the redfish filets in bacon or save the pigfat for next week? Time for coffee and a couple of hard scrambled eggs, maybe a little taste of fried hog meat, just to whet my appetite!

Boston butts are on the smoker. I also jumped the gun on pork fat... but who are we kidding? Pork fat is good two weekends in a row.
 
We are gonna take it a little different way this week on The Quad. Going Tex-Mex with grilled chicken fajitas. The grill will still be hot so no telling what else might end up over the fire. Fall saturdays in Tuscaloosa, good way to spend the day with friends.

Been on a diet for the past 2 months. Lost 35 lbs. My first time grilling today in a long time. I'm gonna keep it light though. Nothing fancy. Just gonna grill some Johnsonville Brats
 
I have detected a common theme in these Saturday menus, cold beer. Like Mack, I am eating light, grilled chicken, grilled asparagus and squash, with a baked spud. This is what the wife and daughter wanted. I would prefer something with more grease! Did I mention a few light beers?

Dang, bro. At least order some wings from Domino's. They're nasty but may give you a little satisfaction. :)
 
Grillin' some hot chicken tenderloins with a homemade rub (it'll cure what ails ya), BBQ boneless pork chops, corn, steamed brown rice, grilled taters basted in olive oil and spices. Lickin' my chops already :BigA:.

Head toward Wilmington and turn South at the first sign of a three story building. Drive 30 minutes and turn right at the Atlantic Ocean. Your nose will get you close and listen for random screams that sound something like Roll Tide Roll. I made your plate ...
